Busy, busy, busy!!! That’s what a lot of people are these days! I’m a mother of 2 and grandmother of 2. I work 3/4 time at a regular job and part-time at a growing home business. I love healthy, whole food but have little time or energy to deal with the time involved in preparing those from-scratch home-cooked meals that my body and tastebuds ravenously crave. My fall back in the past has been highly processed, quick fix foods masking themselves as “healthy,” much like a wolf in sheeps clothing.
Then my health went down the tubes after decades of unhealthy and unsatisfying quick fix meals and nearly 2 more decades passed with me “trying” my hardest to consistently provide healthy whole foods for myself and my family. Needless to say I failed miserably!
Then this past fall I noticed a lot of people on social media were talking about a contraption called the Instant Pot and was intrigued enough to research what the heck it was all about. I determined that it was worth the investment to try this new fangled gadget and I can happily report that I’ve never been disappointed in that decision!
What used to take me hours to prepare was now ready in under an hour and many times less than 30 minutes. Dishes that had never tasted “right” suddenly were perfect and full of flavor! Meats were no longer tough and dry but now were moist and tender.
I was so sold on this little technological wonder that I even bought one for Christmas for both of my adult kids and their families.
